The only place I saw them written down was her handwritten recipe book, and so I cannot give credit to whoever originally created the recipes.<\/p>\n\n\n<p><strong>Chocolate Mousse<\/strong><\/p>\n\n\n<p>Beat 3 egg whites until stiff (and set aside)<\/p>\n\n\n<p>Whip 250 ml cream (and set aside)<\/p>\n\n\n<p>Mix together:<\/p>\n\n\n<ul class=\"wp-block-list\">\n<li>3 egg yolks<\/li>\n\n\n<li>40 g granulated sugar<\/li>\n\n\n<li>3 tablespoons hot water<\/li>\n<\/ul>\n\n\n<p>Until this mixture is thick and creamy.<\/p>\n\n\n<p>Melt 100 g dark chocolate and add this to the mixture<\/p>\n\n\n<p>Add the whipped cream to the mixture<\/p>\n\n\n<p>Carefully fold in the beaten egg whites<\/p>\n\n\n<p>Refrigerate<\/p>\n<p><strong>Boiled Fruit Cake (simple, nut free alternative to Christmas Cake)<\/strong><\/p>\n<p>Boil together these ingredients over a low heat, for 20 minutes :<\/p>\n<ul>\n<li>500 g mixed fruit<\/li>\n<li>300 g granulated sugar<\/li>\n<li>180 g Stork margarine<\/li>\n<li>1tsp bicarbonate of soda<\/li>\n<li>250 ml boiling water<\/li>\n<\/ul>\n<p>Cool this overnight.<\/p>\n<p>Preheat the oven to 150\u00b0C (fan)<\/p>\n<p>Add 125 ml brandy and quarter to half a tub of glace cherries (as desired)<\/p>\n<p>Beat 3 eggs and mix well into the fruit mixture<\/p>\n<p>Add 500 ml plain flour<\/p>\n<p>1 tsp mixed spice<\/p>\n<p>2 heaped tsp Baking Powder<\/p>\n<p>1 tsp vanilla extract<\/p>\n<p>Mix well and bake for 1\u20131.5 hours depending on your oven (should be a lovely rich golden, and a cake tester should come out clean).<\/p><p><strong>Simple Shortbread<\/strong><\/p>\n<p>Preheat oven to 180\u00b0C<\/p>\n<p>Sift together:<\/p>\n<ul>\n<li>250 g flour<\/li>\n<li>75 g caster sugar<\/li>\n<li>75 g cornflour<\/li>\n<\/ul>\n<p>Melt 225 g butter and mix it into the dry ingredients with a knife<\/p>\n<p>Knead and press the mixture into a greased pan<\/p>\n<p>Prick well<\/p>\n<p>Bake for approximately 30 minutes<\/p>\n<p>Allow to cool before cutting into squares<\/p>","protected":false},"excerpt":{"rendered":"<p>Three recipes which I grew up with my Mum making in the 1970s.
