Try a New Recipe: Anzac Biscuits

As the Australian Open draws to a close, would you like to give these yummy traditional Australian biscuits a go…? The origin of this particular recipe is unknown – Lynn’s sister has made it from memory for many years – but Lynn has written down what she has observed. Enjoy!

Recipe:

Prepare 2 flat baking trays and put the oven on at Gas 4 (med hot), fan 165

125g butter or margarine

2 tbsp golden syrup

1 tbsp hot water

Heat together in a saucepan to melt the butter, meanwhile mix together in a bowl:

1 cup plain flour

1 cup demerara sugar

1 cup oats

¾ cup coconut

Then add ½ tsp of bicarbonate of soda to the butter mixture in the saucepan and let it froth up.

Add this mixture to the dry ingredients, then form the mixture into balls on the baking trays.  Bake for about 13 minutes.  If you cook for less they remain chewy – if longer, they become crisp!
